Born and raised in Manado, Head Chef Yoocy Teintang began his professional career in Scandic Hotel in Stockholm where he worked for six years before moving on to become the Head Chef of Jamie’s Italian also in Stockholm where he has been until today. We caught up with the chef during his short break to Indonesia and asked him to share with us his favourite dinner party meal that will surely impress your guests!

Lightly Cured Salmon


500g sugar

250g salt

200g paprika powder

50g smoked paprika/chilli powder

50g fennel seeds

50g dill seeds

50g ground cumin

50g thyme

50g rosemary

50g tarragon

50g ginger (grated or powdered)

50g garlic (grated or powdered)

50g coffee powder or Nescafe

2 lemons (juice and zest)

2kg salmon fillets

Newly crushed black pepper



  1. Prepare the salmon fillets
  2. Rub the salmon with the ingredients listed above, then cure the salmon for approximately one hour on each side
  3. Sear slightly on a pan
  4. Heat it in the oven at 120 degrees until the core temperature changes to 46 degrees

This meal is perfect for lunch or dinner. It’s a typical Jamie’s meal with a touch of Scandinavian influence. Enjoy it accompanied with semi-sweet white wine or lager. You can serve the meal with roasted potatoes or sweet potatoes with plain yoghurt sauce. Splash on a bit of lemon zest, salt, black pepper or guacamole and you are good to go!
