Amuz Gourmet Restaurant introduces new summer menu by the talented Chef Founder Gilles Marx, which is available until August 31.
Start with the refreshing appetiser Tartare de Thon Rouge sur Carpaccio de Tomates Anciennes or Blue Finn Tuna Tartare on Heirloom Tomato Carpaccio and Honey Tomato Espuma. This alfresco-type appetiser is the perfect choice for the summer season. July and August are also the best period for tomatoes, when they are filled with sunshine and sweetness, sliced in fine carpaccio, a perfect addition to the fresh and juicy tuna tartare, with a touch of honey-tomato espuma to combine it all.
The first main course is Pan Roasted French Turbot Fish Fillet, Green Asparagus, Butternut Puree and Orange Comfit-Lemon Mousseline. This light main course consists of pan-fried turbot fillet—one of the best Atlantic ocean’s fish—combined with green asparagus, butternut pumpkin purée and lemon mousseline sauce with some orange skin comfit for a touch of sweetness.
The second one is Foie Gras Prepare de Deux Façons, a Pan-seared Foie Gras served in a tasty Light Mousse, Caramelized Fingerling Banana and Crunchy Cashew Nut Filo Wrap. You can also try another alternative: Canard à l'Orange or Slow Roasted Duck served with Orange Sauce, Candied Orange Skin, Butternut Mousselin and Brussel Sprouts.
Finally, Amuz offers two options for desserts: New Season Cherry and Port Wine Compote on Lime Scented Cheese Cake and Lime Jelly; and Pistachio Crèmeux, Raspberry Financier and New Season Apricot Sorbet. Summer is also the best season for stone fruits and the new season apricots, which are prepared in silky sorbet. Accompanied by cremeux made from the rich, nutty and distinctive Pistachio nuts and raspberry almond financier, this Mediterranean-flavour dessert is perfect for hot summer days.
