Shangri-La Hotel, Jakarta’s Italian restaurant and lounge Rosso, led by by Italian Chef Gianfranco Pirrone, is introducing a new menu concept known as Home Italian Cooking. Diners can now enjoy Rosso’s revamped interior that boasts a casual and relaxed dining ambience, which aims to be a favourite Italian all-day-dining destination.
Italian Chef Franco presents a new menu concept inspired by his childhood in his hometown in Sicily, Italy, along with Italian flavours from other regions he has visited. His childhood was filled with cooking with his family, mastering the subtle art of seasoning and heritage recipes that are now exquisitely incorporated in his signature dishes.
The new recommended entrees at Rosso are Vitello Tonnato (thinly sliced veal tenderloin with tuna sauce), Spuma di Dentice Bianco (white snapper mousse with lemon essence), Tris di Bruschette (mixed vegetables, tomato mozzarella, or porcini parma ham), and more. Among the many varieties of delicious pasta available at Rosso, Chef Franco highlights his childhood favourite: Risotto Pomodoro Limone e Melenzane (tomato and lemon risotto with fried eggplants) and Risotto al Nero e Frutti di Mare (squid ink risotto with mixed seafood).
Meanwhile, Chef Franco’s gourmet pizza is a newly elevated version served in a smaller portion, using thicker dough and made with premium ingredients. For example, his porcini foie gras can be tasted in the Pizza Porcini e Foie Gras (pizza with porcini mushroom and foie gras). And, in addition, Chef Franco also presents a Sicilian twist by applying scallops and lobster on a blackened pizza with the Pizza Nera Aragosta e Capesante (black pizza with Lombok lobster and scallops). Meat lovers are recommended to try Pizza Tartare di Manzo (pizza with classic beef tartare).
Sweet tooths out there should try the Spuma di Cioccolato Albicocche e Menta (chocolate foam with apricot and mint sauce), which, simply put, is the highlight of the season. Other new desserts also include the creamy Panna Cotta Alla Vaniglia (vanilla panna cotta) and Cremoso al Cocco E Fruito Della Passione e Frutti Rossi (creamy coconut with passion fruit).
