Renowned pastry chef Yudhi Harijono is known to be a detailed 'craftmaster' of pastries and cakes. His skilled hands have created numerous kinds of cakes that resemble more of artistic creation than a sweet treat to eat. This time, he helps us concoct a simple recipe of Mini Christmas Cake that we can whip up quickly at home, with techniques that (almost) everyone can do.


12 egg yolks
80 grams of wheat flour
30 grams of cornstarch
100 grams of sugar
120 grams of melted margarine
30 ml of milk
25 grams of melted white chocolate
10 grams of powdered milk
1 tsp mocha paste
1 tbsp chocolate paste

How to cook:
Mix all ingredients except the mocha, chocolate paste, powdered milk, wheat flour, cornstarch and melted margarine.

Mix with high speed until the batter expanded to double the size of original batter and the colour turns into pale yellow, then pour melted margarine (cool it in room temperature before pouring). Mix well with spatula or hands.

Put in wheat flour and other ingredients, mix well.

Bake in the oven for 180C for 30 to 45 minutes
