The time he’s taken to curate the menu for C’s Steak and Seafood at the Grand Hyatt Jakarta hotel was a period well spent as guests ravished his specials, such as the succulent béarnaise sauce Wagyu beef to the poached pineapple dessert.

After his trip to Indonesia, Chef Aidan is bound for the breathtaking scenery of Ireland, where his labour of love awaits: the Wild Honey Inn. Choosing to go down the culinary route instead of becoming an engineer has proved fruitful for the one-Michelin-starred chef. It was behind a hotel kitchen’s doors in 1984 in London that he realised his dream of opening his own restaurant.


Scrumptious Bites - Fillet of Wagyu Beef

While the Wild Honey Inn launched him to stardom, it was Aidan’s first restaurant, Muses, that taught him a lot about running a business. It was also there that his wife, Kate Sweeney, fell into business with him. “More often than not, you dedicate your time to the business rather than the relationship, so you have to be likeminded and passionate about what you’re doing. For us, that’s making the customers happy,” says the Irishman. Ten years and many moves later, Aidan and Kate chose to go back to County Clare to set up what would later become the Wild Honey Inn.
