But if you prefer to stay at home and cook your own food, there are also many vegan-friendly recipes that are easy to make.     1/5 @sculptedkitchen - Cake

  • Ingredients:

    2 cups of flour

    2.5 tsp of baking powder

    1/2 cup of melted coconut oil

    1.5 cup of sugar; your choice

    1/2 cup of plant-based milk with 1 tsp of apple cider vinegar, leave aside

    3/4 cup of plant-based yogurt

    1 tsp of vanilla

    A dash of pink salt

    2 × 8-inch round cake pans

    Method:

    1. Preheat oven to 350 degrees Farenheit
    2. Grease your pans and leave aside
    3. Take the melted coconut and pour into a large bowl; add your milk and then sugar and mix well; add the yogurt and mix again
    4. Add the dry ingredients and slowly fold, being careful not to overmix
    5. Slide the pans into your warm oven and cook for 30 minutes, letting them cool completely
    6. Take one cup of coconut cream and add maple syrup or icing sugar 
    7. Frost your cakes and then add one layer of fresh or frozen pineapple slices
    8. Stack your cakes together and then pipe the top of the; garnish with fresh fruit

    Ingredients (for eight crêpes):

    1 1/2 cup of soy milk

    1 cup of all-purpose flour

    1 tbsp of maple syrup

    2 tbsp of melted coconut oil

    1 tsp of vanilla extract

    1/4 tsp of sea salt

    1 tsp of orange zest

    1 tbsp of cold water

    Method:

    1. In a bowl, mix the ingredients together with a whisk to remove all the lumps
    2. Add cold water if needed (it needs to be thin but not too thin)
    3. Spray a hot flat pan with coconut oil or neutral oil and pour a little of the batter on your pan away from the heat, quickly moving the batter around the hot pan to spread it thinly (being fast and not pouring too much batter is the key in making truly thin French crêpes)
    4. Leave to cook on medium heat for about 1 minute per side then flip with a spatula and cook the other side
    5. Keep the crêpe on the side and cook the remaining crepes the same way
    6. Top with your favourite toppings: orange zest and maple syrup, jam or vegan Nutella

    Ingredients (for six popsicles):

    280g cashew yoghurt (or plant-based yogurt of your choice)

    100g soft peanut butter, crunchy

    60ml maple syrup

    120ml water

    1/8 tsp salt

    Chocolate coating:

    2 tbsp raw cacao powder

    2 tbsp maple syrup

    2 tbsp coconut oil, melted

    1 handful of salted peanuts, roughly chopped

    Method:

    1. Mix the cashew yoghurt, peanut butter, maple syrup, water and salt until smooth
    2. Equally divide the mixture between the popsicle moulds, insert the popsicle sticks and freeze for at least six hours, or overnight
    3. For the chocolate coating, mix all ingredients (except the peanuts) until smooth
    4. Remove popsicles from the moulds and dip into the chocolate; sprinkle with peanuts and return back to the freezer once the chocolate coating has hardened

    Ingredients (for five):

    150g vegan white chocolate (or any dairy-free chocolate)

    1/4 cup peanut butter (or any nut butter)

    1 tbsp maple syrup

    Tiny pinch of salt

    Method:

    1. In a bowl, mix the peanut butter and maple syrup together vigorously until the peanut butter firms up
    2. Form into little patties a bit smaller than your moulds
    3. Place on a tray lined with baking paper and pop them into the freezer to firm up; meanwhile, melt the chocolate and place a spoonful of chocolate into the bottom of each mould
    4. Place in the freezer until set; once set, place the peanut butter patty in the centre
    5. Fill the moulds with chocolate; top with a sprinkle of freeze-dried raspberries (optional)
    6. Place in the fridge or freezer until set

    200g flour

    25g sweet potato flour

    50g brown sugar

    Wet ingredients:

    250 oat milk

    100ml water

    1 tsp vanilla bean paste

    1 tbsp coconut oil, melted

    Pinch of salt

    Method:

    1. In a bowl, combine the dry ingredients
    2. In another bowl, combine the wet ingredients
    3. Pour the wet mixture over the dry ingredients and stir until just combined (don’t over-mix, lumps are fine); set aside for 15 minutes
    4. Heat a small pan (10-12cm) over low to medium heat and bake the pancakes for about two minutes each side
